On this week's episode of the Eat Green Make Green Podcast, I sit down with the incredible Keith Schubert. Keith is the owner of the wildly popular Taco Party Truck, which slings ridiculously good tacos out of their food truck throughout Boston and out of their retail location in Somerville... Oh, and they're 100% plant-based! Keith has quite a wild story, I'm not sure where to begin... We talk about his life growing up in rural New Hampshire, how he went on a nation-wide tour with his band, how he then became a roadie for Fergie and the Black Eyed Peas and travelled the world, how he came up with the idea for a taco food truck while in China, all the hurdles he's had to overcome to start Taco Party, why adopting a plant-based lifestyle has made him lighter (both physically and emotionally), and much more.
